Vegan Lemon Custard

Note from Rose: This was so much better than I expected it to be... usually experiemnting with corn flour ends badly for me...but this is tasty! Rose

  • 3 tablespoons sugar
  • 4 fl oz approx of soya milk
  • 1 tablespoon corn flour
  • 1 teaspoon lemon essence or lemon oil
  • 2 tablespoons lemon juice or lime juice
  • about 3 tablespoons or 1 1/2 oz margarine

1.Off the heat, whisk together the sugar, Corn flour and the soya milk in a pan until all lumps disappear. 

2.Turn on heat to medium high and bring to boil, stirring constantly until thickened.

3. Remove from heat and stir or whisk in lemon oil, lemon juice and margarine until smooth

4.let it cool and then ice, smother, drizzle, slather or just plain old eat it as it is ;)
