Falafel is an extremely easy food to incorporate into many different types of meals. Although apparently we prefer it nice and simply with a wrap and salsa!

  • 2 cans of chickpeas
  • 1 medium onion
  • 1 carrot
  • 1/2 cup parsley
  • 1/4 cup wheat germ
  • 1 tsp baking soda
  • 1/2 tsp salt
  • 1 tsp cumin
  • 1/4  tsp coriander
  • 1/4   tsp cayenne pepper
  • 2  tbsp lemon juice
  • 1 tbsp Vegetable Oil

1. Chop the onion, parsley and the carrot.

2.  In a food processor, add the Onion, Parsley and carrot with all of the rest of the ingredients ecept the oil, and blend. If you like textured falafel then save some of the chick peas and add them in at the end so you have a few larger chunks.

3. Using your hands, form some little balls or patties with the mixture. Place on a plate or baking sheet lined with parchment and refrigerate for 15-20 minutes to make sure they keep their shape.

4. In a heavy bottomed skillet or frying pan over medium heat, heat the oil and cook 3-5 patties at a time for several minutes on each side or until golden brown.
