Bombay Potatoes

From our own Suzanara - this was a very well received dish in February 2013


Ingredients
  • 1 x large Chopped Onion 
  • Chopped Garlic to taste
  • Grated Ginger (1 tablespoon)
  • Mustard Seeds or 1 teaspoon of Mustard Powder
  • Coriander to taste
  • Cumin to taste
  • Turmeric to taste
  • Garam Masala to taste
  • Curry Powder (Suzanara used Mild)
  • 1 x Can or carton of chopped tomatoes
  • 1/4 pint stock water
  • 2 x Potatoes
  • Bag of Spinach


1. Fry onions on med heat until transparent

2. Add Spices and Garlic

3. Add Chopped Tomatoes and Stock

4. Parboil Potatoes and add to rest

5. Cook for 15 Minutes or until potatoes cooked fully and sauce has thickened

6. Stir in Spinach at end until wilted.

7. Serve either hot or cold
